This dish really gets the most out of the humble cauliflower, letting it stew in a mix of herbs, olive, potatoes and tomatoes to soak up intense flavour. Leave a whole bulb of garlic in as well to get a beautiful puréed bundle of creamy garlic-y goodness. Finish it off in the oven for that lovely crispy finish, and see just how versatile veg can be.
